Easy Creamy Garlic Zoodles

​The majority of Americans do not eat enough vegetables. Substituting veggies, such as zucchini, for pasta is a way to increase your total vegetable servings and to add fiber to your diet.
 
Serving size:  1 for an entrée or 2-3 for a side dish

​Ingredients

  • 2 medium zucchinis (peeled, if not organic, and spiraled in a spiralizer or sliced)
  • 1 TBSP of organic, grass fed butter (you can also use olive oil)
  • 1 clove minced garlic
  • OPTIONAL:  ¼ c. parmesan cheese
  • Additional suggestions to increase the veggies: sautéed onions and mushrooms, diced tomatoes
  • TIP:  Use seasonings such as Italian blends and/or pepper to provide additional flavor instead of adding salt.

​Directions

  1. Use spiralizer or slice up zucchini.
  2. Sauté garlic in the butter for a minute or two.
  3. Sauté zucchini (and additional veggies) for 3-5 minutes.  Don’t cook them too long or they’ll get soggy.
  4. OPTIONAL:  Add parmesan cheese and cook until melted.  This can also be put on after it is in your bowl.
  5. RECOMMENDED:  Put cooked zucchini in a strainer to remove excess liquid.  This keeps the zucchini from getting too soggy, but can be kept as-is, if you prefer.
  6. Enjoy!
