On a hot summer day, there’s not much better than a tall glass of lemonade to make you feel like a kid again. But sometimes you may want something that is a little more crunchy or a little more creamy or a little more adulty. You might want something with less sugar and more protein. If that is the case, you have come to the right place! Here are five of my favorite recipes for lemony treats. As with any treat, please enjoy in moderation.
Raw Lemon Meltaway Balls by One Green Planet
These balls are raw, vegan and simply wonderful. You must store them in the fridge, but that gives you extra refreshment on a hot, sticky day. You can make them plain or coat them in coconut flakes or powdered sugar – or make some of each. Yum!
Paleo Lemon Cookies by Texan Erin
Believe it or not, these are not only vegan, grain-free, gluten-free, and dairy-free, these cookies are divine! They are super easy to make and so tasty. I used regular almond meal instead of almond flour (my local grocery store didn't have the flour), so mine turned out slightly more brown than the photos on this site, but they were still full of flavor and just enough sweetness. Everyone around the office loved them. So good!
No Bake Sugar-Free Lemon Coconut Truffles by Sugar Free Mom
These truffles are very light and lemony. The recipe calls for coconut cream, which you can get from letting a can of coconut milk sit in the fridge for a while and then scraping the top layer off. Easy peesy! These need to be stored in the refrigerator. They cannot sit out for an extended period of time, otherwise they get melty. But that just adds extra coolness - perfect for a hot day!
5 Ingredient Paleo Lemon Bars by Food Faith Fitness
Seriously – only 5 ingredients: honey, coconut oil, coconut flour, eggs and lemons (zest and juice). Put them in the right order and you have a dessert that I think is better than the traditional lemon bars you see at parties. They are very decadent. One of my favorites!
Lemon Poppy Seed Energy Bites by Amy’s Healthy Baking
These are gluten-free and sugar-free, but full of flavor. An interesting combination of fresh lemon juice, oats, poppy seeds, and protein powder, these are refreshing and pack a little hidden protein into each of these cute little freckled balls.
